Here is a terrific Sauvignon Blanc pairing by our Resident Chef, Julie Hoskins of Unexpected Chef, featuring the delightful 2014 Two Old Dogs Sauvignon Blanc Napa Valley and Fennel Salad. This great wine from Herb Lamb Vineyards along with this delicious seasonal salad show, once again, that Sauv Blanc is a great food wine year-round!
Fennel Salad 2.0
It is truly a gift to taste my favorite varietal from one vintage ad compare to another. I had the opportunity to talk to winery proprietor, Jennifer Lamb, about the uniqueness of a carefully curated lot that grows the grapes. Chefs and, obviously, the winemaker of Herb Lamb vineyards understand that using the best product and allowing the ingredients to create flavor always works best in the end.
The 2014 vintage tasted just as wonderful as the 2013. I wanted to do a recipe I have done in the past, but refine it a bit – my fennel salad 2.0! Here is a recipe that picks up the nuances found in the 2014 Two Old Dogs Sauvignon Blanc Napa Valley. It is a nice pairing this time of year when we want our tired palates revitalized. Hope you enjoy!
Note: a mandolin makes short work when thinly slicing fennel, onions and cabbage. It can be purchased at a kitchen supply store inexpensively.
Fennel and Orange Salad with Goat Cheese (v. 2.0)
2 heads fresh fennel, thinly shaved (see note)
4 oranges cut into segments, juice reserved
4 oz. goat cheese, crumbled
1/4 cup Kalamata olives, pitted & halved
1 tablespoon fresh mint, cut into chiffonade
1/3 cup olive oil
1 tablespoon shallots, minced
2 tablespoons champagne vinegar
salt & pepper to taste
Whisk reserved orange juice, champagne vinegar, shallots, olive oil in large bowl until emulsified. Add shaved fennel, oranges and olives. Toss to cover with vinaigrette. Place on platter and scatter goat cheese crumbles and mint over top.
Serve with the 2014 Two Old Dogs Sauvignon Blanc Napa Valley!
